Spaghetti Aglio e Olio

Ingredients
- 200g spaghetti
- 4 garlic cloves, thinly sliced
- 1/4 cup extra virgin olive oil
- 1 tsp red pepper flakes
- Salt, to taste
- Fresh parsley, chopped
- Grated Parmesan (optional)

Instructions

Bring a pot of salted water to boil and cook the spaghetti until al dente.

In a pan, heat olive oil over medium heat. Add garlic and red pepper flakes. Sauté until garlic is golden.

Reserve a cup of pasta water, then drain the spaghetti.

Add the spaghetti to the pan. Toss with the garlic oil, adding pasta water a little at a time if it feels dry.

Stir in chopped parsley.

Serve hot, topped with grated Parmesan if desired.
